Grass-Finished Beef Short Ribs
Description
There are two common cuts of short ribs: English-style, which are cut into long or short one-bone pieces, and flanken-style, which are cut into strips across several ribs. You might also find boneless short ribs, which are excellent for stews and Korean barbecue. Tender, melt-in-your-mouth beef short ribs make a wonderful meal, especially during the cooler fall and winter months. Short ribs benefit from long, slow simmering, whether in the slow cooker, in the oven, or on the stovetop. Or, if you need tender short ribs in a hurry, cook them in a pressure cooker. Many long-cooking recipes can be cooked in a fraction of the time in the Instant Pot or pressure cooker.
